Thanksgiving is right around the corner and on behalf of all of us here at The Honey Ladies we wish all of you a wonderful and joyous time with your friends and family.

With that being said, here is a recipe that we recommend for your Thanksgiving meal:

Honey-Glazed Turkey Recipe

Ingredients

• 1 turkey (14 to 16 pounds)
• GLAZE:
• 1/2 cup honey
• 1/2 cup Dijon mustard
• 1-1/2 teaspoons dried rosemary, crushed
• 1 teaspoon onion powder
• 1/2 teaspoon salt
• 1/4 teaspoon garlic powder
• 1/4 teaspoon pepper
• STUFFING:
• 1/2 cup butter, cubed
• 2 cups chopped onion
• 1-1/2 cups chopped celery
• 12 cups unseasoned stuffing cubes or dry bread cubes
• 1 tablespoon poultry seasoning
• 2 teaspoons chicken bouillon granules
• 1 teaspoon pepper
• 1 teaspoon dried rosemary, crushed
• 1 teaspoon lemon-pepper seasoning
• 3/4 teaspoon salt
• 3-1/4 to 3-3/4 cups boiling water

Directions

1. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. Bake at 325° for 2 hours.
2. In a small bowl, mix glaze ingredients; brush over turkey. Bake 1-3/4 to 2-1/4 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.)
3. For stuffing, in a Dutch oven, heat butter over medium-high heat. Add onion and celery; cook and stir until tender. Add stuffing cubes and seasonings; toss to combine. Stir in enough boiling water to reach desired moistness; transfer to a greased 13-in. x 9-in. baking dish. Bake, covered, for 1 hour. Uncover and bake 10-15 minutes longer or until lightly browned.
4. Remove turkey from oven; cover loosely with foil and let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with turkey and stuffing. Yield: 14 servings (8 cups stuffing).

Editor's Note: Stuffing can also be baked in turkey. Loosely stuff turkey just before baking; bake as directed, increasing final bake time by 15 minutes or until a thermometer reads 180° in thigh and 165° in center of stuffing.

Nutritional Facts

8 ounces cooked turkey with 1/2 cup stuffing equals 663 calories, 20 g fat (8 g saturated fat), 189 mg cholesterol, 1,129 mg sodium, 47 g carbohydrate, 3 g fiber, 73 g protein.

Here are some facts that you probably didn't know about:

• Hands down, unprocessed local honey is the best. Raw honey is the least processed and has the most nutrients.
• When honey is exposed to high heat, it loses most of it's nutrients and benefits. Try not to microwave your honey!
• Did you know the darker the honey, the stronger the flavor will beeeeee...plus more nutrients as well as antioxidents.
• Fun Fact: Buckwheat honey is among the most nutrient rich honeys and has been found to be a great cough suppressant. This type of honey is a toss up for a lot of people because it is so dark and rich. Try mixing it with a milder honey if you think it's too much.
• Be sure to store your honey at room temperature to avoid crystallization. If your honey does crystallize, set it in a bowl of hot water for a few minutes which will help it to restore to it's normal consistency.

Did someone say Popcorn??

Being in the industry has it's perks, and having an abundance of honey leads me at times to some really cool recipes that I either find or concoct myself. Well the other day, I found a pretty sweet recipe on the site naturalnews.com. Written by Christy Pooschke, she hooks us up with a Popcorn recipe you are surely going to want to try out.

Healthier Sweet 'n' Salty Popcorn Recipe

Ingredients

• 1/2 cup popcorn kernels
• 4 TBSP butter (or coconut oil)
• 2 TBSP honey (preferably raw)
• 1/8 - 1/4 tsp sea salt, to taste

Directions

• Pop the popcorn into a large bowl using an air popper. (If you prefer, you may use the stove-top method, instead, using the directions printed on most bags of popcorn kernels. In that case, coconut oil is a great choice for stove-top cooking.)
• Meanwhile, melt the honey and butter (or oil) together on the stove in a small pan over low- to- medium-low heat.
• When the popcorn is done, pour the butter/oil and honey mixture over the popcorn and toss to coat.
• Sprinkle the popcorn with sea salt and toss to coat it evenly.
• This treat is sticky and delicious, and it makes enough to serve 2 to 4 people.

Swarming is the natural means of reproduction for honeybee colonies. A new honeybee colony is formed when the Queen Bee leaves the colony with a large group of worker bees which is the process called "swarming". What can we do to help save the Honey Bees

Everyone has a tiny deep down fear of being stung but that should be the least of your worries.  Have you ever thought of what might happen if there were no bees?

These little guys play a vital role in our everyday life.  Through Pollination, bees help produce many of our specialty crops like almonds, berries, fruits and vegetables.  According to a recent CNN article, it's estimated that bees are responsible for about one in every three bites of food in the U.S.  That's a crop value of $15 billion to 18 billion.

But as great as this sounds, things are not looking to great these days for the bees.

Honeybee Colonies since the 1940's have decreased from 5 million to 2.5 million.  Researchers say there could be a variety of reasons to there decline saying anything from parasite, not enough pollen, bacteria, all the way to environmental reasons.

If  you are just as concerned about the bees like we are at The Honey Ladies, and even if you are not a beekeeper, no worries.  Here are five simple things you can do to do your part in helping saving the bees:

1. The Pollinator Partnership:  World's largest nonprofit organization dedicated solely to help protect and promote pollinators like bees.
2. Plant: Whether it is a window box in your apartment, a garden in your backyard or a green space in your community, there's something you can grow to help bees no matter where you live.  A good example is choose plants that flower at different time of the year to provide nectar and pollen sources throughout the growing season.
3. Reduce or limit: Limit the use of pesticides while plants are in bloom and while the bees are out foraging.  Bees can be poisoned by these pesticides which can drift onto blooming plants or weeds.
4. Register: If you already have a green thumb and plants available for pollination, you can register your space to be included on the Pollinator Partnership's database.  This S.H.A.R.E. map collects pollinator habitats from all over the world in an effort to build the community.
5. Buy local: Some of you already know how wonderful our local honey is.  This is a great way to do your part.  So be on the look out for local organically grown fruits and vegetable and especially our honey.

Good Afternoon from the Honey Ladies.

Have you ever thought of renting to own your very own beehive?  Well get ready, we do just that.  We rent beehives to Gardner's and local home owners with small acreage farms.  We will also work with you on a rent-to-own basis.

Now you might be thinking is this a task I am ready to take on.  Taking on the role of a beekeeper is not as easy as 1 2 3.  Honeybee colonies are not like kittens or puppies that can be easily moved and/or on a very short notice.  A healthy hive in mid-summer will have approximately 30,000 happy residents.  So even with a rental, a beehive is a commitment not only to your garden and the environment, but also to the hive itself.

So with that being said, research is key when taking on this commitment.  Here are a few things you should do:

• Study..Study..Study
• Read up on Beehives.  Buy several books.  Knowledge is power.
• Join your local Bee club.  This is a great way to meet with several fellow Beekeepers to get tips and feedback on what works and doesn't.
• Take a beginners beekeeping course.  I highly recommend this as it will better familiarize yourself with the wonderful role as beekeeper.

Hive rentals are seasonal and usually done for a specific crop or the pollination of a garden.  Honeybees have outstanding pollination abilities and are ideal for backyard gardens and small acreage farmers.  Honeybees are normally available for rental from the end of April until August.

Our professionally trained beekeepers prepare the hive(s) on your property and the installation is designed to make the honeybees job of taking care of and improving your property easy, but also to protect the hive from family pets, children's play areas, excess sun, moisture and any other detrimental elements so it may flourish naturally.  

After installation, we offer maintenance and regular check-ups of the hive which is included in the price.

About me:  I am a second generation bee keeper bringing in some old fashioned techniques but also a forward thinker when it comes to "clean" beekeeping.

Some of the services we have to offer include removals of wasps, bee's, hives and swarms.  We also offer the sale of bee's, hive rentals, and hive check up's.  Most importantly though, we offer some of the best local honey around.  Our honey is "ALWAYS" 100% raw with just the basic filtration.  What this means is we would never "extend" the honey with corn syrup or otherwise.

Here are some facts about Honey:

1.  Honey never goes bad.

2.  One bee in her lifetime does not make one spoonful of honey.   It takes about 36 bee's during their nectar collecting phase to make a tablespoon of honey.

3.  If you don't like your honey to crystallize then keep it warm.  If it does crystallize, put it in a paper bag on top of your car on a warm day and it will go back to it's liquid form.

4.  Bee's don't refrigerate their honey.  In fact, they keep it at a toasty average of 98 degrees in the summer!
